The catalogue · Three ways to commission

Commissions

Custom work usually hides behind “message for pricing”. This catalogue doesn’t: every commission has a starting price and a lead time, so you know before you write whether a piece fits your table and your date.

ICelebration cakes

A single cake for a single day — birthdays, anniversaries, the small occasions that deserve a centrepiece. Two to four tiers, sugar florals worked by hand, flavours composed around the person it is for.

IIDessert tables

A table set like a vitrine: petits gâteaux, choux, tartlets and glazed pieces arranged as one composition for twenty to eighty guests. Designed with your florist and your room, delivered and installed by me.

IIISignature entremets

The gallery pieces — mirror-glazed entremets in small editions for dinner parties and private dining rooms. Serves eight to sixteen; each one plated, finished and titled like the work it is.

 — Where the work is made

Marble, copper, flour in the air. Every commission is made here by me, start to finish — no production line, which is why the calendar is small.

Begin a commission

A date, a headcount, and whatever you already know about the occasion. The sketching starts from there — I’ll come back with a direction and a firm price.

I answer every brief myself, usually within two days. If your date is close, write anyway — sometimes the calendar is kinder than the lead times above.
