Three sessions a season, held at the atelier’s own bench. The groups are small enough that I see every fold — that’s the whole method, and why the seat counts below are honest.

Session ILamination day

 — Saturday 12 September

Lamination day

A full day on laminated doughs — butter blocks, folds, proof and bake — until the cross-section says what it should. You leave with a box of your own croissants and the timing sheet I actually use.

Session IISugar-flower weekend

 — Saturday 3 – Sunday 4 October

Sugar-flower weekend

Two slow days of sugar florals — petal by petal, wired and dusted — building the rose work that finishes the celebration cakes. Small on purpose; every flower gets looked at.

Choux, one evening

An evening of choux — paris-brest rings, crème mousseline, the piping that makes them look effortless. The friendliest door into the atelier.

Tell me the session and where you’re starting from. Aprons, tools and everything you bake are provided — you only bring your hands.

Seats are confirmed in the order requests arrive. If a session is full I keep a short list for the next date.
